Spent an informative and amusing day cooking delicious street food and snacks. We tasted all of the spices that we were going to use which was interesting in itself, I’d never thought of doing that before, and the emphasis on the day was about cooking, tasting and adjusting. Nik was prompt at sending out the recipes after the class and he even included information about where to buy a curry plant which was an added extra. Post class I feel empowered to look at other recipes for Indian food and evaluate how authentic they are and I feel inspired and confident to be more adventurous with the recipes I choose. Thanks Nik!!

What a superb day with Nik and fellow students! Welcoming, knowledgeable and amusing, Nik led us, in masterly fashion, through the spices, ingredients, techniques and tastes, to produce a feast of a supper. Looking forward to to a return visit.

Nik is an excellent teacher, a genial host and a lovely bloke to spend an afternoon cooking with.

What I liked about the course (Punjabi vegetarian) is the application of a similar underlying method to multiple dishes, which really helped bed in the knowledge through practice.

I chose the course as I wanted to step up from simply following recipes to understanding the roles different spices have to play and how to layer them down and for that, it was perfect.

What a lovely way to spend a Sunday! As lovers of all things edible we cooked and ate our way through the day making and eating tasty Indian street food and snacks. What made the course was Nik himself - his knowledge and humour brightened up the greyest of days and brought a group of strangers together into what we liked to think was a well oiled machine, mixing and frying bhajis and vadas, making bowls of pohe chat. We walked away full and happy armed with a clutch of recipes, a deeper understanding of spice bases and flavours and a few tricks up our sleeves. Goes to show you can teach an old dog new tricks. Thank you Nik for a wonderful experience.

What a fabulous class. Nik is a such an excellent teacher. Very amusing and inspiring. We cooked so many things in one day and the sensory led way he teaches really allows you to feel like you can walk away and do it confidently by yourself. Brilliant, highly recommend. Will return!

Spent a great day with Spice Monkey, taking Nik’s beginners vegetarian course with my husband, bought as a Christmas gift to do together.
We had a great time and learned a lot. The class was pretty small, two other couples and two singles, so eight of us altogether, meaning plenty of opportunity to actively participate.
We started by tasting all the difference spices, fresh and dried. Nik was good fun and very informative. He gave us all tips on where to buy the ingredients depending on where we lived and how to store and combine them to make delicious dishes to our taste. In the class we made our own mixed veg bhaji, potato and bean bhaji, spinach and toor dhal, and lemon rice. We took all these dishes home with us and a delicious lunch was provided during the class. Thoroughly recommend to anyone wanting to learn how to make Indian food at home. Great team activity regardless even if you’re not planning to turn chef.

I did the Taste of the Punjab course and can't recommend it highly enough - it was loads of fun as well as being an incredible learning experience. Very excited about applying the techniques to my home cooking, and now eyeing up some of the other Spice Monkey courses. Thank you!
